Ingredients

2 to 3 pounds chicken thighs and breasts

   Salt, to taste

 1 tablespoon coriander powder

 2 cups rice

4-5 onions

4-5 green chillies

6-7 garlic cloves

1/2 inch ginger piece

Handful of coriander leaves

 Handful of mint leaves

 1/4 cup oil (1/4 cup vegetable oil and 1/4 cup ghee)

 2 tablespoons garam masala

 (1 teaspoon cinnamon powder + 1 teaspoon fennel seed powder + ½ teaspoon mace powder + ½ teaspoon nutmeg powder + ½ teaspoon black pepper powder + ¼ teaspoon clove powder)

Ingredients:

● 1 tablespoon olive oil

● 1 onion, finely chopped

● 6 cardamom pods, crushed with the back of a knife

● 2 bay leaves

● 4 cloves garlic, crushed or finely chopped

● 1 teaspoon turmeric

● 1 pound boneless and skinless chicken breast, cut into bite-sized pieces

● Salt and pepper to taste

Method

Section: 1.In a large saucepan over low heat, add olive oil and onions. Stir occasionally until the onions are softened and translucent. This should take about 10 minutes. Add in cardamom pods, bay leaves, garlic and turmeric. Stir for about 2 minutes.

Instructions

Season chicken pieces with salt and pepper to taste. Place in saucepan with the onions and spices. Cook chicken for 5 minutes before adding rice, stock and water. The liquid should come up to your first knuckle (about 1 inch) above the rice line in the pan.
